I am diabetic, and have been for a number of years. I don't take any meds and usually my numbers have been fine. Yesterday, however, my morning test was 167 which was very high for me. So, yesterday I got out my diabetic cookbooks and started a menu. Last night I had Parmesan Encrusted Tilapia and sauteed green beans with mushrooms and onions:
I tested myself 4 times yesterday and the only sweet thing I ate was 2 Milano cookies with dinner. My blood sugar was 126 two hrs after breakfast, 107 before lunch and 114 after a snack of fresh cauliflower with ranch dip at 7 pm. This morning, my blood sugar was 167 again! Aaarrrgh! So, apparently your blood sugar rises between 2 am and 8 am!
This morning I made an asparagus and tomato crustless quiche (and it was delicious!):
I also did 10 minutes on my recumbent bike yesterday, and lost 2.2 pounds! (I've been eating way too much junk food lately, so I had been packing on the pounds). I will be starting to exercise more each day and will continue the diabetic diet to see if I can reduce the high readings in the morning, and my A1C. Living alone and not liking to cook has taken its toll, so now I will be making up more menus and cooking whether I like it or not!
